Halibut en Papillote
Ingredients (yields 2 servings):
- 2 Sheets Parchment Paper
- 5-6 oz 1-inch thick Halibut, Seabass, or Black Cod
- 2 tablespoons Canola Salad Oil
- 4 cups Spinach
- 2 tablespoons Butter
- 3/4 cup White Mushrooms sliced
- 1 cup Zucchini diced into 3/4-inch pieces
- 2 Roma Tomatoes diced into 3/4-inch pieces
- 1 Red Bell Pepper roasted, peeled, and sliced
- 10 Kalamata Olives pitted and sliced
- 6 Baby Artichokes fresh, cooked and quartered, or marinated and canned
- 1 large Shallot minced
- 1 tablespoon Garlic minced
- 1/2 bunch parsley chopped
- 2 tablespoon White Wine
- 2 tablespoon Extra Virgin Olive Oil
- 1 Lemon cut in 1/2
